The Accidental Cake Pop

Good Morning!
Ever have a failure ?  I did, but instead of crying over spilt milk, I decided to make lemonade out of lemons; well actually, cake pops out of failed squares.


 I had an awesome recipe for
 Caramel Cornflake Squares
1/2 cup margarine
6 tbsp milk
12 McIntosh toffee bars
12 cups Cornflakes
1 1/2 c almond slivers (optional)

Mix first three ingredients together and microwave until all melted.  Stop and stir so as not to burn.  Once melted,  stir in Cornflakes and almonds.  Spoon mounds on to a greased cookie sheet and let cool.  Enjoy.

Enjoy, I would have, but they were hard as rocks.  I overcooked the caramel. Damn.
DON'T OVERCOOK THE CARAMEL!
 After staring at them for a few minutes or so,
I decided to grind them up in the food processor to a very fine; almost flour like texture.




  I mixed two cups of the mix to 1/2 cup of cream cheese. 
 I combined it all with my hands and formed them into 
 1 1/4 inch balls.


 I cut some stir sticks in half as I didn't have any sucker sticks on hand.  I put a stick in each one and popped into the freezer for about an hour.
 

 After the freezer,  I melted some white chocolate and coated each ball thoroughly.  The coating dried fairly quickly as the balls were frozen!









 I melted milk chocolate, and piped on some dark chocolate.  So that's how I was like a superhero and saved the day!  Well, a superhero without powers or motivation.....but anyways, they were very yummy.





  If you are lucky, you can just make the Caramel Cornflake Squares (and they will work for you cuz you wont overcook the caramel......but if it happens, you know what to do!!
